Momocakes, Chocolate Chip Cookies & a GIVEAWAY!

If you’ve been following us for the past couple months one thing should be clear by now…I like chocolate chip cookies.  Having finally found the perfect chocolate chip cookie, my next quest has been to find a gluten-free option.  I’ve found that when my joint pain gets annoying going gluten-free for 30 days helps reduce it.    We eat very little processed foods in our house so I turned to the recipe world out there. I’ve tried a few but didn’t love for the results.  Well, search and ye shall find.

Even though I’m in the process of shedding 10 lbs off my lovely lady lumps I still have found a place for my special cookie, just not as often.  Now that I have a gluten-free-made-from-scratch option I’m in heaven!

Leslie started Momocakes with the intention to make vegan gluten-free baked goods as yummy and tasty as their gluten-full counterparts.  She not only accomplished that she also jumped the hurdle of making them in our high altitude!  Mike who is a skeptic on the gluten-free/vegan/high altitude baking= tasty is a convert.  Leslie was also a contestant in the baking contest Mike was in and we got to try her Chocolate Fudge Mint Fat Pants cake.  It was moist, tall and one of the best cakes ever.  I’m not saying this just cause she’s our sponsor either!  I promise!!

Leslie is a character and a friend.  I’m so glad to be working with her.  Together we were quite the team in the kitchen but see for yourself.  Here’s the first instructional cooking segment for Mike and Molly’s House TV!

Make your own Momocakes vegan gluten-free chocolate chip cookies for high altitude:

Vegan Gluten Free Chocolate Chip Cookies


3/4 c dairy free soy free vegetable shortening
1 c evaporated cane juice  (organic vegan cane sugar)
2 1/4 tsp vanilla extract
2 1/4 tsp Ener-G egg replacer with 2 tblsp rice milk
1 1/2 c plus 1 tbsp of gluten-free flour mix (I like Bob’s)
*2/4 tsp+ pinch xanthan gum
*1 tsp + pinch of baking soda
1/2 tsp salt
1 c plus 2 tbsp dairy free , soy free chocolate chips

* If you’re not at high altitude adjust to 3/4 tsp xanthan gum and 1 1/8 tsp baking soda


Pre-heat oven to 350 degrees and line 2 cookie sheets with parchment paper

1.  In a bowl use hand or stand mixer, cream the shortening and sugar about 2min. Then add vanilla, egg replacer and mix for additional 20 seconds.
2.  In separate bowl, mix together flour,xanthan gum, baking soda and salt
3.  Add flour mixture to the creamed batter , mixing on low speed about 20 seconds.
4.  Fold in chocolate chips
5.  Drop the batter by the tblsp.  onto the baking sheets, roll into balls then flatten cookies slightly to they’ll spread evenly. Bake 9-11 minutes.
Cool and enjoy!

Bake for 9 minutes.  The first time watch them carefully.  They will not go brown like a typical cookie and if you over bake them by even a minute they will become very hard.
